After the sprinkles of spring, everything seems so fresh when summer finally arrives. I am a summer girl through and through!

One of my very favorite things about summer is all the fresh produce that comes into season here in California. You know what that means when everything tasty is in season. It’s also available at really great prices!

90 percent of the groceries found at ALDI are their own ALDI-exclusive brands. Normally you might skip over the “off-brand” products. BUT at ALDI their exclusive brands are legit guys!

It was such a surprise to find affordable meat that was also USDA Certified organic and Non-GMO verified. When I found the SimplyNature® Boneless Skinless Chicken Breasts for under $1.50 per pound, I was like, what! I can never find prices that low anywhere else around here!

One of my favorite ALDI products so far were these Pueblo Lindo Homestyle Tortilla Chips. They are the very most delicious chip and pair perfectly with this Avocado and Black Bean Salsa!

Are you ready to talk about this delicious avocado and black bean salsa? It’s pretty much like summer in a bowl!

Crisp red bell peppers, creamy avocados, and zesty limes are just a few of the simple ingredients that make this recipe taste so darn good!

Our family is not a huge fan of raw tomatoes which is why I use bell peppers in this recipe. My husband’s uncle actually introduced me to this trick! I love how it ads such a crisp and sweet flavor to the salsa.

This recipe can be made ahead of time but is best if you eat it within the first day of putting it together.

Fresh Avocado and Black Bean Salsa


Ingredients

2 Avocados

1 Red bell pepper

¼ cup chopped cilantro

Juice of 2 limes (about 6 Tbs)

1 ear of roasted corn on the cob

1 tsp Stonemill Essentials Garlic Powder Garlic Powder

½ tsp Stonemill Essentials Salt

½ tsp Stonemill Essentials Ground Black Pepper

1 – 15oz can Specially Selected Black Beans, drained

 

Start by chopping your avocado, red bell pepper, and cilantro.

Juice the lime and cut the corn off the cob.

Okay, and here comes the hardest part, so make sure you have your digital highlighter ready…

Dump everything into a bowl and mix until combined.

All that’s left is to grab your favorite tortilla chip (see above for my new favorite!) and dive in.

This salsa isn’t only good for dipping chips. Oh no! There is plenty more ways to completely experience this wonderful summer salsa!

I have sprinkled it over a bed of lettuce with some shredded chicken to create a wonderful salad.

You might want to take a tortilla with a little shredded chicken and cheese, and then generously smother in this avocado and black bean salsa. Wrap it up for a healthy meal on the go!
