Tortellini and Fresh Vegetable Soup

It’s no secret that it is cold outside! Well in most parts of the country. Here in San Diego… waking up to 50 degrees outside is probably a warm welcome to some. But nonetheless, I’m still cold and all I can think about is soup!

This tortellini soup is one of my family’s favorites. It is inexpensive to make and makes a nice big pot full of tasty chunky fresh soup! The best place I have found to buy the tortellini is at Costco. You can get two big packages for around $10 but you will only be using one for this recipe, so put the other in your freezer for a different day. If you go to a regular grocery store you will easily be paying over $8 for a single, much smaller package.

Tortellini Soup Ingredients

In a deep pot, start by browning the sausage. I like to cook it until just before all the pink is gone. It will continue to cook as the soup is put together, so you don’t want to over do it. About one minute before you are finished cooking the meat you want to add the garlic and cook for just about one more minute. Drain off any fat.

While the meat is cooking you can start prepping your veggies. I like to slice both the carrots and zucchini into small pieces about a ¼ thick. You don’t want to cut them too thin because then they will get supper wilted and gooey.

Now add everything except the zucchini, carrots and tortellini. Bring this to a simmer, cover and let cook for 25 minutes. Stirring occasionally.

You are now ready to add the zucchini and carrots, let that cook for 5-10 more minutes, depending on how well cooked you like your veggies.

Next add the pasta and cook 8-10 minutes then you’re ready to warm up to a beautiful bowl of hot soup! Enjoy!

Ingredients
  1. 1 lbs. Italian sausage
  2. 4 Cloves of garlic, minced
  3. 1 cup Apple cider or juice
  4. 5 cups Chicken broth
  5. 1 15 oz. can Petite diced tomatoes
  6. 1 8 oz. can Tomato sauce
  7. 3 Tbs Dried Italian seasonings
  8. 2 Medium zucchini, sliced
  9. 1 cup Carrots chopped
  10. 1 16 oz. Package of cheese tortellini
Instructions
  1. In a large pot, start by cooking the sausage until the pink is just about gone, add garlic and cook for one more minute. Drain off any fat.
  2. Add apple cider (or juice), chicken broth, tomatoes, tomato sauce, and Italian seasonings. Bring to a simmer, cover and let cook for 20 minutes. Stirring occasionally.
  3. Stir in zucchini and carrots and simmer for 5-10 minutes depending on how well cooked you like your veggies.
  4. Lastly, add tortellini and let cook for an additional 8-10 minutes. Soups up!

I Need Thanksgiving Leftovers!

Leftovers! When it comes to Thanksgiving, the leftovers can be just as mouth watering as the main event and what can be more frugal than using leftovers from yesterday to make a brand new dinner creation tonight? Cheesy, saucy, tasty, and sandwichy (sure that’s a word) is what I think of when I image my leftovers. There is only one thing that stands between me and devouring one of these tasty treats, I don’t have any leftovers at my house! My plan, go venture out in the crowds tomorrow and see if I can hunt down a cheap turkey. Only purpose, create leftovers so I can try one of these recipes.

I hope everyone is having a great Thanksgiving weekend! We have been spending our time playing games, shopping, hanging with family, and getting out our Christmas goodies. I’ll be back on Monday exhausted from Black Friday shopping but excited to share all the goodies I found and plans on how to use them for my holiday decorating. Have a great weekend!

Cheap Breakfast – Banana & Zucchini Muffins

Sometimes in our house breakfast is more of something I need to check off my “to-do” list rather then a meal. This is why muffins are one of my go-to breakfast items. These muffins are very easy to make and really taste great. I love all the cinnamon flavor mixed with the banana. Not to mention that there is zucchini in them so I feel pretty good about feeding them to my family.

Best of all, they are super cheap to create. Think about it, if you were to go to the store and buy half a dozen muffins from the bakery they would cost you around $4 or $5. This recipe should only cost you about $2 and it makes about 16 muffins. 

One thing I do with a recipe for muffins that makes this many is I will freeze whatever I don’t think we will eat in the first two days. Two days is about how long it takes for my kids to consistently eat something before they get sick of it. But if I put the extras in the freezer, the next time my kids want muffins I just pull a few out of the freezer the night before and they are ready to eat the next morning.

Here is how you make breakfast frugal and fast:

The very first thing you do is combine all the dry ingredients (flour, baking soda, baking powder, salt, cinnamon, oats) in a separate bowl. I like to use either a whisk or a fork to mix this part.

Next in a separate bowl you combine all the wet ingredients which would be the sugar, yogurt, eggs, oil, vanilla, banana, and zucchini. I also like to mix this step with a fork to make sure everything gets incorporated very well.

Note: I like to make sure I smash the bananas extra good and shred the zucchini on the smallest grater size I have. I don’t like to find big pieces as I’m biting into my muffin.

Now add the wet ingredients to the dry. This time mix the ingredients with a plastic spatula only until everything is combined. If you over mix your muffins they will turn out in weird shapes and have air tunnels throughout it. The batter might be a little lumpy and that’s just right. Hard part is over. Now spoon or scoop the batter into your cupcake tins that have been sprayed with cooking oil.

Pop them in the over for about 15-18 minutes. You are now ready to eat a super moist and flavorful frugal muffin.

Ingredients
  1. 1 1/2 cups flour
  2. 1 teaspoon baking soda
  3. 1 teaspoon baking powder
  4. 1/2 teaspoon salt
  5. 2 teaspoons ground cinnamon
  6. 1 cup oats
  7. 1 cup sugar
  8. 1/2 cup greek yogurt or sour cream
  9. 2 eggs
  10. 3/4 cup canola oil
  11. 2 teaspoons vanilla
  12. 2 ripe bananas mashed
  13. 2 cups shredded zucchini
Instructions
  1. Pre-heat your oven to 350 degrees and grease your cupcake tins with your favorite baking cooking spray.
  2. In a large mixing bowl combine flour, baking soda, baking power, salt, cinnamon, and oats. Mix well.
  3. In a separate mixing bowl combine sugar, yogurt/sour cream, eggs, canola oil, vanilla, bananas, and zucchini. Mix very well.
  4. Add wet ingredients (sugar mixture) to the flour mixture. Combine using a plastic spatula and mix only until just combined. Batter may be lumpy.
  5. Fill cupcake tins about 2/3 full with batter. Cook for about 15-18 minutes or until a toothpick or knife is inserted and comes out mostly clean. These are moist muffins so there will be a little muffin on the knife. Let cool in tray for about 5 minutes then remove. Enjoy!
