I have been SO excited to share this recipe with you! I am always on the look out for yummy pineapple recipes since my family is in love with the fruit! Since I first made this over the top delicious meal, I knew that you would just love it!
What makes it so good? Other than the super fun way it is served, having the rice and chicken actually served in the pineapple adds an extra level of flavor. The rice soaks up the pineapple juice and becomes so tasty you will be scavenging for the very last grain!
Our Dream Fair Food
Last summer the hubby and I went to the San Diego County Fair on a super fun date night. There are so many fun things to see and do but our main attraction was the food! Immediately as we stepped onto the fairgrounds we new exactly what we were going to be eating! Someone walked by with half a pineapple filled with delicious smelling chicken. We were on a mission!
We eventually found the booth that was serving our desired treat! But immediately our dreams were dashed as we saw the price… The meal for one person was almost $15! That was NOT in our fair food budget. So sadly we walked away but I was determined and made a promise to the hubby that we would make it ourselves!
Make it for Cheap
This entire recipe to feed a family of four is only going to cost you around $5! I just could not bring myself to spend the $30 total for us to eat it at the fair that day. Depending on what price you get the pineapple for, you can make this fancy recipe for pennies compared to what you would pay somewhere else.
And of coarse, it is super easy to make! No need to look any further for pineapple recipes because this one will top them all!
How to Make Teriyaki Pineapple Bowl
You will need to start with the basics. Which would be your teriyaki chicken and the rice. Use the teriyaki chicken recipe below to make this whole meal outstanding!
While your rice is finishing up you can start prepping your pineapple. Take a very sharp knife and slice the whole pineapple down the middle, vertically. It might take a little force to get it down through the stem but you can do it!
Now take a smaller serrated knife and cut along the rim of the pineapple. Try to get as close to the skin as possible.
Now wedge a spoon in your slit that you just cut and start scooping out the pineapple. Cut up the scooped out pineapple into cubes.
You are ready to start layering your bowl. I recommend starting with the rice down first. That way it can soak up all that yummy juice! Add your chicken and chopped pineapple.
Now go ahead and impress!

- 1 tbs. vegetable oil
- 2 chicken breasts, thinly sliced
- ½ cup pineapple juice
- ½ cup soy sauce
- ½ cup brown sugar
- 1 tsp garlic powder
- ½ tsp pepper
- 2 tbs. corn starch
- Start by heating oil in a medium pan. Add chicken, thoroughly cook.
- In a separate bowl mix together remaining ingredients.
- Add sauce to chicken, continually stir over medium heat until sauce thickens.
- Enjoy.
