It’s a pretty cool story of where I got the original recipe for this pad thai meal.
There is THE sweetest lady that I go to church with. Literally, t-h-e sweetest! She is actually from Laos and lived there her entire life growing up. It’s an unbelievable story of her journey to the United States!
Well she is the one who taught our entire Relief Society (women’s group at church) how to make Chicken Pad Thai.
To say she knows what she is doing in the kitchen, doesn’t serve her justice. Anything I have ever eaten that she made, makes me rethink what is good in the food world. Her food is outstanding!
With that said, I have made some alterations to her original recipe she shared with us. Though it just isn’t quiet as good as this sweet sister’s culinary work of art, my quick and cheap take on the recipe is pretty yummy! If I do say so myself!
I have created some short cuts to help with time and save a little bit of money.
This recipe is a great one in general but especially when it comes to cooking on a budget. You can buy almost all the fresh ingredients for under $5! The most expensive ingredient would be the rice noodles.
BUT if you happen to have an Asian market nearby, it would be worth a trip to stock up. While you are there, explore every single isle and try something new! It’s like a treasure hunt every time we go!
The thing with Asian cooking I have found, is that once you have the basic oils, seasonings, and sauces, you are set for a long time before you will need to restock!
I’m not sure you are ready for how easy this recipe is! You will be blown away at how tasty it is!

How to Make Easy Chicken Pad Thai
5 Tbs oyster sauce
5 Tbs soy sauce
5 Tbs dark soy sauce (I found this at the Asian market but you can also order online here)
1 tsp sesame oil
4 Tbs brown sugar
½ tsp salt
½ tsp pepper
16oz rice noodles (cooked/hydrated)
2 cups cooked cubed chicken
2 cups cabbage/coleslaw mix
2 cups sprouts
1 bunch green onion, chopped
In a small bowl, stir together all sauce ingredients.
In a large bowl, toss together all fresh ingredients.
Now start drizzling the sauce over your chicken pad thai. Start with half the sauce at first, then slowly add more sauce as you stir to combine.
Depending on the noodles and other factors that I don’t know the scientific explanation of, some days you may need more or less of the sauce for your meal.
Keep adding the sauce until it reaches the taste you like. Taste testing is a big part of this recipe!
