As soon as the kids wake up it is go time! We are lucky and aren’t quiet into the school years yet so we do have our pick of when to get ready, most days. But that doesn’t mean that our mornings aren’t crazy! A super simple and frugal breakfast is a must!
For some reason my kids wake up silly hungry! I mean, the first words out of my almost two year old sons mouth are, “Eat breakfast.” I try to get him to give me hugs, talk about his dreams, nope! He will not have any conversation before we make it to the kitchen. Even then, it has to be related to how soon he will be consuming food.
So needless to say, I try to make breakfast as quick as possible. I also try to make the meal as nutritious as possible. It is important to me that my kids have a balanced food intake throughout the day but my main motivation… fill those tummies and keep them full! That way, I don’t feed them breakfast and before I even finish cleaning it up (it seems) they are already asking me for snacks. Drives me crazy!
Second reason I like to provide a nice breakfast for my family, I need it and love it! (totally selfish) Every once in a while a nice cold bowl of cereal sounds really good and we will go with that. But that gets old quick and doesn’t fill those tummies for very long. My next go-to is eggs and toast. Super quick, cheap, healthy, and filling. Add a side of fruit and a glass of milk and you are set!
These bacon and avocado breakfast sandwiches were a great way to mix up the morning. I used to make these all the time when I was working. I would prep and wrap them up to eat in the car on my way to work. I am sure kids would love the same thing on their way to school!
Let me show you how easy and tasty these can be!
I could just say, toast your english muffin, fry an egg, slice some avocado, melt some cheese, and add some bacon. That shows you just how easy this meal is but wouldn’t paint you the full picture of exactly how tasty this breakfast is, now would it?
Now to paint the picture:
Start by toasting your english muffins, then add a little butter because… why not? While the muffin is in your toaster, crack open an egg into your pan that has been pre-heated on medium heat and sprayed with a non-stick cooking spray.
Definitely want medium heat on this one! If you get the pan too hot, then your egg is going to splatter and spit hot oil all over your clean stove (my stove is pretty much never clean but maybe yours is!) and onto your hand. Not the best way to start the morning! Too low of heat and your egg is going to slim all over your pan and that never looks pretty.
Sprinkle your egg with a little salt and pepper then flip over and cook to your desired consistency. I prefer mine over easy. Just a little bit of gooiness but not too much. I don’t like to get too messy eating my breakfast.
When your egg is finished cooking, place it on top of one side of the toasted english muffin, add a slice of your favorite cheese (I chose sharp cheddar), top with some fresh avocado, and slightly crispy bacon. Easy right?
Time saving tip: When I make a recipe that calls for a few strips of bacon, I cook the entire package and put the extra pieces in an airtight container. Saving this delicious meat for moments just like this one. But remember, the bacon doesn’t last forever in your fridge. In our house we don’t have to worry about it going bad because the bacon stays around for very long!
This super simple and frugal breakfast is just as easily made for multiples. Use a bigger pan and toast up a few more muffins and you are set! This is sure to fill your families appetite and appeal to everyone’s taste!
